The Eclair is back and this time it’s personal
After years of tyranny by the cupcakes, muffins and macarons around the globe – a little place in Paris called L’Eclair de Genie is bringing back the glorious days of the Eclair. This pastry made with pâte à choux, a fluffy cream filling and mouth-watering icing on top most of us have forgotten. But in this factory with its yellow metal and wood interior design which in its reduction to the essentials speaks to me, the creative heads behind it give it their best and yes it is worth every it!
The Eclairs are presented for the magnificent creation that they are from cholocat/caramel and caramel au beurre sale (the most famous ones) to noisette/praline and framboise/rose you can’t go wrong with any of these.
Just be aware that these are pastries that are very filling. The best thing you can do is just buy one and eat it right there. Then you will understand what i am talking about and decide for yourself how many you can handle now and what you want packed up for later. Also everything with fruits is a bit lighter than caramel and chocolate but i think that should be clear to everybody.
They also sell delicious marmalade, creams, nougat and caramel paste which is ingenious for cooking unless you are an idiot like me and try to bring them as hand luggage on the plane and realize after hundreds of flights that 120g of any paste may it be body or caramel is still not allowed….sad moments in life.
